foods that make you feel full. While looking at casserole recipes to feed Tom this week, I kept that in mind, and made
this Sausage Potato Casserole.
(Note: It is DELICIOUS. Like super-glorified scalloped potatoes. Do NOT add salt. Do feel free to add carrots shredded or chopped up reallyreally small. Corn or peppers or the other usual veggies might work as well, in moderation. If you'll be reheating it, go easy on the cheese topping - it won't remelt if it's too thick.)
I heated some up for Tom last night, purposely giving him a smaller portion than he would usually get himself. And when he finished, HE SAID HE WAS FULL!!! Wooooo! Potatoes ftw!
I should do scalloped potatoes more often anyway. Tom loves, and I FREAKING ROCK at making them from scratch - I discovered I can indeed cut potatoes veryvery thin, and it's really fun and makes me feel all accomplished.
Unfortunately, I also fell prey to a craving for cupcakes later in the evening, and Tom agreed, so I also made a batch of
these chocolate cupcakes, which totally hit the spot. The little touches of coffee (espresso in my case) and cayenne were just what I was looking for to add depth to the chocolate. (Also threw in a touch of saigon cinnamon, yay.) Fortunately, my muffin pan only does six at a time, and I was too impatient to do two sequential batches, so the rest of the batter got made into mini-cupcakes. (Go figure, my mini-muffin pan is like three times the size of my muffin pan.) Mini-cupcakes are a much, much safer idea for me, I think. I'm all about nibbling and munching and grazing. There are a few mega-cupcakes for Tom, who apparently needs the calories. :p
